Fun Free Fall Activities

This is an article from Savvy Spending about some fun ideas to do this fall. Try some of these and add some of your own favorites.

1) Go apple picking! Visit an apple orchard and pick some apples. Then you can use these to make a whole bunch of yummy treats:

Apple Crisps

Core apples (and peel if you desire) and cut into thin slices. Place them on a baking sheet and cook at 250 degrees for one hour. They'll be a little bit crunchy and a little bit chewy- a mix between dried fruit and a fruit snack!

Apple pie: You'll need:
2 9-inch pie crusts (one for the top crust, one for the bottom crust)
1/4 cup all-purpose flour
3/4 cup sugar
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
Dash of salt
2 tablespoons butter
6 cups thinly sliced and cored apple
Directions:
1. Preheat oven to 425F.
2. Mix sugar, cinnamon, nutmeg, flour, and salt. Stir in the apples.
3. Place into pie crust, dot with butter. Cover with top crust, and slit evenly to let steam escape. Seal the top crust to the bottom by pinching the edges together.
3. Cover edge of the crust with a three inch strip of aluminum foil.
4. Bake 40-50 minutes, until crust is brown and juice begins to bubble through top.

Caramel Apples: Place 6 apples in the fridge overnight. Push craft sticks into the tops. You'll need to melt 1 package (14 oz) of individually wrapped caramels with 2 Tablespoons Milk in the microwave. Heat in the microwave for 2 minutes, stirring once. Allow to cool a bit. Then, dip and twirl the apples in the caramel sauce until coated. You can also top with nuts, Oreos pieces, sprinkles, graham cracker pieces, etc. Place on wax paper or buttered baking sheet to set. You could also place them back in the fridge to set.

2) Go on a hike: Visit a local state park or your city's walking trail. Look for pinecones to use to make a craft- you can turn them into Christmas ornaments with a little glitter glue or place in a large bowl for a pretty display.

3) Rake the leaves and play: You can have a jumping contest (parents- you can play too!) and then use the leaves to make your own scarecrow! Use an old shirt, sweats, pantyhose for the face, and stick for arms, and a hat to create your own lawn decor!

4) Have a picnic and game night: Now that it isn't as hot, take dinner outside and enjoy the cooler weather. Pack a picnic dinner and bring a game with you- frisbee, a board game, charades, etc.

5) Make Leaf Art: Go for a walk and find some colorful leaves. Then turn them into artwork you can display in your house. Go here to read how to do this.

6) Go the the Cider Mill: We have a few in our area, but our favorite has free admission, a free small petting farm, and lots of photo ops. You can pay a small price for a wagon ride, but this is a great way to spend some time outside with your family.

7) Have a bonfire: This may be your last chance until next summer. Roast hot dogs and s'mores over the fire. If you don't have a fire pit, ask a friend who does if you can use theirs (and share the goodies with them.)

8) Visit your neighbors. I love to bake in the fall, and most of my favorite recipes make more than enough for us. Make a big batch of banana bread, pumpkin muffins, or lasagna, and take some to your neighbors. If you're like me, you won't see as much of them in the winter as you did in the summer!You could also visit the elderly at a nursing home or some shut in's from your church.

9) Go to a game: Now that school is back in session, go see a local high school football game, soccer match, or volleyball game. Root for your home team and then treat yourself to some yummy hot chocolate after the game!

10) Squeeze in some summer fun: Did you not get something checked off your summer "things to do" list? A trip to the zoo would be less crowded now. Some museums offer discounted rates on certain days. Your local Parks and Rec department probably offers some neat classes or fall events for free or cheap. If you never made it to the beach, you could still go in the fall. The weather may be too cool to swim, but you can collect shells and build castles. Ask your family what one thing they wished you had done over the summer and try to get it done this fall!

Simmer ingredients from vegetables to water together until veggies are tender.

In a smaller pan, make a white sauce by blending oil & flour together, add milk and heat to boiling, then add bouillion, mustard, pepper & cheese. Once smooth, add to veggies. Add broccoli and cook 5 more minutes. Serve with bread & salad.

TOTAL COST: $2.80 (and makes 2 meals) = so for 1 meal = $1.40

I went to Rite Aid this week (9/26-10/2) and was in desparate need of diapers. This was one of the best deals I could muster (about 14 cents/diaper). Here's the scoop:

Lunchtime Tip

Have I mentioned my lunchtime savings tip? My husband is great about eating leftovers, which is happy for me. I have learned to always cook extra. If there is WAY too much, we have another meal. If there is just 1-2 servings leftover, we put it in the tupperware and place it in our "leftover" drawer in our fridge and send it to work with the huz the next day. We figure that it saves us oodles of money. Think about it - I don't have to even buy the frozen meals to cook at work. I pay the $2-5 per meal for my family and feed my family the night before and my husband for 1-2 lunches. He saves the money he would have spent going out to lunch and we are all happy. Here's a calculation breakdown.

Cost of Lunches

Leftovers: ranges from $.25-$2 for a lunch (the $2 would be if we had STEAK, which is very rare) - and I can be sure to get some veggies and healthy foods instead of prepared, greasy foods - Average cost: $.68/day

Frozen Meals: Cost for 1 pot pie or burrito is about $.50 - my huz would eat at least 2, plus need some sort of treat, veggie, and possibly a fruit = >$2 - Average Cost = $1.50

Eating Out: Cheapest is about $5, usually closer to $7-8 - Average Cost = $5 (I make him be cheap)


FOR A WEEK:
Leftovers = $3.40; Frozen Meals = $7.50; Eating Out CHEAPLY = $25

FOR A MONTH:
Leftovers = $13.60; Frozen Meals = $30; Eating Out CHEAPLY = $100

FOR A YEAR:
Leftovers = $176.80; Frozen Meals = $390; Eating Out CHEAPLY = $1300 (a mortgage payment!)

SAVINGS:
Leftovers instead of Eating Out for 1 year for 1 person (double if you have 2 working full-time)= $1,123.20 (or nearly 1 month's mortgage)
Leftovers instead of Frozen Meals for 1 year (double if you have 2 working full-time)= $213.20 (or nearly 1 car payment or piano lessons for 1 child for a few months?)

Frozen Meals instead of Eating Out for 1 year (double if you have 2 working full-time)= $910 (still a hefty portion of a mortgage payment)

Anyway you look at it, taking a lunch vs. buying lunch is hugely economical. With using this money to make an extra payment on your home each year, you could pay off your home 8-10 years earlier than your predicted rate and save even more!

Burrito Filling

1 can enchilada sauce (or a pkg with the fixings) ($.75)
1-2 cans black beans ($.50)
1-2 cans pinto beans ($.50)
1 can corn ($.50)
1 bottle salsa (16 oz) ($1)
1 small can chopped green chilies (optional) ($.33)
1 1/2 cups minute rice (I use pre-cooked rice) ($.25)
3 Tbsp lime juice ($.30)
Fresh cilantro, chopped ($.50)

Can also add:
3 frozen boneless, skinless chicken breasts - I can't tell much of a difference in taste, just cost

SERVES: about 18-20 (or 2-3 meals and lunch leftovers for my family)

INSTRUCTIONS: Put first 6 ingredients (and chicken, if desired) in crock pot. Cook on low 8-9 hours. Shred chicken with fork (if used). Add rice, lime juice and cilantro. Cook 10-15 minutes more. Place in flour tortillas and add cheese, sour cream, salsa, & guacamole, as desired.


TOTAL COST ~$6 or about $2-3 per meal (or up to $8-9 or about $3-5 per meal with chicken)

Sloppy Joes

Prep Time = 20 minutes
Serves = 5 LARGE servings or 8 smaller (but still full buns) servings

1 lb lean ground turkey ($1.75)
5-8 small hamburger buns ($.88)
1/2 cup chopped onion ($.25)
1/2 cup chopped red bell pepper ($.35)
1 cups tomato sauce ($1)
1 Tbsp red wine vinegar ($.01)
1 Tbsp Worchestershire sauce ($.10)
1 tsp steak seasoning blend, dry (I had to use pepper and it was fine) ($.05)
Dash of salt ($.01)

Brown beef. Add dry seasonings. Add onion, peppers, Worcestershire sauce, and vinegar to the pan. Stire and cook another 5 minutes. Add tomato sauce and stir well. Reduce heat to low and cook the mixture for another 5 minutes.

Toast the buns, if desired. Fill buns with mixture and enjoy. I serve this with a salad and carrots.

TOTAL COST: $3.52

WW points - if serves 5 = 5 pts each; if serves 7-10 = 2-3 pts each


***Another stretcher pointer: I keep #10 cans of dried onion or dried peppers and when I don't have them on hand, I simply place a few Tbsp of this in a bowl with 3x the warm water and let it sit 15 minutes, then use as if it was chopped onions or peppers. It is easy, saves me money/time of going to the store, then saves me more time/money because I don't buy anything extra and I can cook during nap time! *** I love stretchers!

In reality, this cost me: <$3 because I used both vegetables dried this time.

Zucchini STRETCHER

Here's my new favorite stretcher:

ZUCCHINI!

Anyone have an abundance of zucchini in their yards? I don't! I have found too many uses for it. This has been the summer of 101 uses for zucchini and I love it. The only thing I am sad about it that I am not storing nearly enough for the rest of the year because we are using so much. You'd think with 3 zucchini plants and 2 yellow squash plants, we'd have plenty, but not so. Here's some ideas so far:

**Use it as a filler with beef - we've used it in spaghetti sauce, lasagna and MEATLOAF and my non-zucchini lovers haven't even noticed and gobbled up each of these. Texture: Shredded

**Use it in place of other veggies - we've found a fabulous "cheesy potatoes" recipe for Friday night burger night and we substitute half the potatoes with zucchini & squash and it is delicious! Texture: Slice it

**Use it in muffins or pancakes instead of pumpkin. Texture: Shred it

**Add it to soup. Last week we didn't have any corn, so I popped in some chopped summer squash instead and nobody noticed or complained. Texture: Chop it.

**I think it would also be good in breakfast burritos or omelets but haven't tried that out yet. Texture: Shred it.

**Now we are trying out zucchini patties this week - we'll let you know what we think.

Try it out and STRETCH your money a little further. And next year, I'm planting MORE zucchini (and teaching my dog not to eat it)

Black Bean Burritos

10 (10 inch) flour tortillas ($1)
2 tablespoons vegetable oil ($.15)
2 small onions, chopped ($.85)
1 red bell pepper, chopped ($.65)
1 teaspoon minced garlic ($.01)
3 (15 ounce) can black beans, rinsed and drained ($.50)
1 teaspoon minced jalapeno peppers ($.25)
8 ounces cream cheese ($1)
1 teaspoon salt ($.01)
1/2 cup chopped fresh cilantro ($.50)


Directions
Wrap tortillas in foil and place in oven heated to 350 degrees F (175 degrees C). Bake for 15 minutes or until heated through.
Heat oil in a 10-inch skillet over medium heat. Place onion, bell pepper, garlic and jalapenos in skillet, cook for 2 minutes stirring occasionally. Pour beans into skillet, cook 3 minutes stirring.
Cut cream cheese into cubes and add to skillet with salt. Cook for 2 minutes stirring occasionally. Stir cilantro into mixture.
Spoon mixture evenly down center of warmed tortilla and roll tortillas up. Serve immediately.

Zucchini Patties

Original Recipe Yield 12 patties

Ingredients
2 cups grated zucchini (drain first & pat in paper towel or is it TOO runny) ($0)
2 eggs, beaten ($.18)
1/4 cup chopped onion ($.15)
1/2 cup all-purpose flour ($.10)
1/2 cup grated Parmesan cheese ($.25)
1/2 cup shredded mozzarella cheese (optional) ($.25)
salt to taste
2 tablespoons vegetable oil ($.15)


Directions
In a medium bowl, combine the zucchini, eggs, onion, flour, Parmesan cheese, mozzarella cheese, and salt. Stir well enough to distribute ingredients evenly.
Heat a small amount of oil in a skillet over medium-high heat. Drop zucchini mixture by heaping tablespoonfuls, and cook for a few minutes on each side until golden.

Cream of Anything Soup

BIG STRETCHER!

To make a mix

2 cups powdered milk ($.75)
1 cup cornstarch ($.50)
3 Tbsp chicken boullion ($1)
2 Tbsp onion flakes ($.10) - then grind if desired
1 Tbsp celery seed ($.10) (or 1/4 tsp ground)

Store in an airtight container. (I just stick it all in a Gallon Ziploc Bag and mix with it zipped).

TOTAL COST: $2.45 for 9+ servings below or <$.27 per "can" - beat that!

To use mix:

1/3 cup mix
1 1/4 cup water
1 Tbsp Margarine (I ALWAYS use Olive Oil)

Stir and cook until it comes to a boil, about 3 minutes (I've never had it boil in 3 minutes, closer to 10, but I always triple it at least).

Can be used for any recipe calling for a can of cream soup. May add chicken, broccoli, cheese, mushrooms, celery, or ANYTHING!

Apple Crumb Bars

2 cups Oats ($.40)
1 1/2 cups all-purpose flour ($.15)
1 cup packed brown sugar ($.20)
1/2 cup applesauce (free)
1/4 cup butter, melted ($.25)
1 tsp ground cinnamon ($.01)
1/2 tsp baking soda ($.01)
1/2 tsp salt, optional ($.01)
1/4 tsp ground nutmeg ($.01)
1 cup applesauce (free, but up to $1)
1/2 cup chopped nuts ($.50)

Prehead over to 350 degrees F. In large bowl, combine all ingredients except 1 cup applesauce (the 1/2 cup applesauce is a substitue for part of the butter and works fine and needs to be added now) and nuts; mix until crumbly. Reserve 1 cup oats mixture. Press remaining ingredients into bottom of greased 13x9 metal baking pan (I used glass and was fine). Bake 13-15 minutes; cool. Spread applesauce over partially baked crust. Sprinkle reserved 1 cup oats mixture over top; sprinkle with nuts. Bake 13-15 minutes or until golden brown. Cool in pan on wire rack; cut into 2-inch squares.

Makes about 2 dozen bars.

TOTAL COST: $1.54 - $2.54

*I like these chilled/frozen because they are a little soggy with the applesauce at room temperature.

DID YOU SEE THE STRETCHER??? I use applesauce all the time in place of part or all of oil or butter. It is cheap because I can usually get apples for free and can the applesauce myself and it lowers the fat content by far and adds a yummy taste. Any questions?

Broccoli & Rice Casserole

12-16 oz pkg or 2-3 cups chopped Broccoli (or broccoli stalks) - Free (but can be $1)
3x Cream of Anything Soup mixed together ($.81)
2 cups rice ($.10)
2 cups water
Lemon Pepper ($.01)
2 Tbsp Lemon ($.15)
1-2 cups grated cheese ($1.50)

Put dry rice on bottom of a 9x13" pan. Put chopped broccoli on top. Make Cream of Anything Soup and pour on top. Add other ingredients, cover with foil, and bake at 350 degrees F for 30-45 minutes. Top with cheese. Serve with bread and salad or fresh veggies.

TOTAL COST: $2.57, but up to $4.07

Taco Soup

Cook together then drain the following:

1 lb hamburger (or beans) ($.50)
1 small onion, chopped ($.50)

Add:

2 1/2 cups mild salsa (even Mango Salsa is good - I just tried it!) (free, but can be $1.50)
1 large can tomatoes (free, but can be $1)
1 (15 oz) can kidney beans (undrained) ($.50)
1 can niblets corn (undrained) (free, but can be $.50)
1/2 tsp chili powder ($.01)
1/2 tsp garlic salt ($.01)
1 TBSP taco seasoning ($.10)

Mix all together and heat through.

Serve with grated cheddar cheese sprinkled on top, sour cream, and corn chips (sliced olives, optional)

MEATLESS VERSION:

I substitute beans for the hamburger - I've used black, kidney, pinto, garbanzo, and many white beans - they are all great. Cook it with the onion and then add the rest (including more beans - the more the merrier)

**Another substitution: I ran out of canned corn but have an ample supply of zucchini and squash, so I just added some chopped yellow squash and nobody complained at all, especially when they could douse all the food in cheese and sour cream.

TOTAL COST: $1.62 8/31/10, but up to $4.62 or even $6 with meat
