Baked Blueberry-Peach French Toast

16 slices whole wheat bread ($.25)
1 cup blueberries ($1)
1 large peach, chopped, 1 cup frozen slices ($.25)
2 1/2 cups fat-free milk ($.50)
2 cups eggs/egg substitute ($.50)
2 Tbsp Sugar ($.05)
1 tsp cinnamon ($.01)
1 tsp vanilla ($.01)
1 Tbsp powdered sugar ($.05)

Preheat oven to 400 degrees F. Arrange 8 pieces of bread in 9x13 dish, squishing slices together. Sprinkle blueberries & peaches on top. Whisk together milk, eggs, sugar, cinnamon, & vanilla. Pour 1/2 on casserole. Top with remaining bread and then sauce. Cover with foil. Bake 20 minutes. Remove foil & bake about 10 more minutes. Slice into 8 pieces and serve (1 slice per serving)

TOTAL COST $2.12 (more if you don't make homemade bread)
